Shortbread
Called shortbread and not shortcake due to a scottish tax law which increased tax on cakes.
Ingredients
- 1 part butter
- 2 parts sugar or powdered sugar
- 3 parts flower
- 1 tsp of vanilla extract (increase accordingly)
Method
- Soften butter, mix sugar with it
- Mix in flower until a firm-ish cookie dough
- Wrap and put in fridge for an hour
- Take out, cut into shapes, oven at 140deg if fan, 160 otherwise for 15 minutes. Should be very lightly browned but barely, shouldnt be squishy
