Shakshuka
A really nice tomato sauce with vegetables, really well spiced with a lot of flavour. Traditionally you create a dip in it and crack an egg into it to solidify whilst its cooking but I add tofu blocks instead.
Ingredients
For 1 person
- 1 quarter pepper (any or multiple colours)
- half an onion
- 1-2 cloves of garlic
- 1/2 tsp coriander
- 1/2 tsp sweet paprika (smoked is fine too)
- 1/4 tsp ground cumin
- chilli flakes (however much you want, 0 is fine)
- 1/2 can of chopped tomatos
- tofu
- 1/4 cup fresh chopped parsley
- 1/4 cup fresh chopped mint
optionally:
- a few chopped cherry tomatoes to go in with pepper
- spring onion to go in with pepper or on top
Method
- Using olive oil, head onion, pepper, garlic, all spices, chilli plus salt and pepper. Cook till veg is soft.
- Add chopped tomato and leave to simmer with lid on for 5 minutes
- Add tofu to surface and leave for another 5
- Add parsley and mint onto surface, serve with nice bread or on its own.
